A great review and really great to see an American loving links golf, it should be enjoyed and not feared (just have some fun trying to shape shots because of the wind and the sloping fairways). I've seen a few too many Americans complaining about the wind in reviews before, that's the beauty of links golf and i'm really glad to see that you understand that. I agree with the earlier review; play Royal Cinque Ports (Deal) next time you visit Sandwich, lots of people actually prefer it to RSG, and Princes and Littlestone are also great fun to play (and cheaper than their 'Royal' neighbors').
